Ingredients

 Carrots3 Cup (48 tbs), diced
 Saltines12 , crumbled
 Onion2 Teaspoon, minced
 Butter2 Tablespoon
 Pepper1⁄2 Teaspoon
 Cheese1⁄4 Cup (4 tbs), grated

Directions

Cook carrots in boiling water to cover; drain.
Re- serve 2/3 cup carrot liquid.
Mash carrots; add saltines, onion, butter and pepper stirring well.
Place in casserole; pour over carrot liquid.
Sprinkle with cheese.
Bake in 375-degree oven until cheese melts.
