| Lemon juice | 1⁄4 Cup (4 tbs) | |
| Carrots | 1 1⁄2 Cup (24 tbs), grated | |
| Celery | 1⁄4 Cup (4 tbs), finley diced | |
| Green pepper | 1⁄4 Cup (4 tbs), diced |

Directions
Add 1/2 cup of water.
Stir constantly over low heat until gelatin is dissolved.
Remove from heat; stir in remaining water and lemon juice.
Chill mixture to unbeaten egg white consis tency.
Fold in mixed vegetables.
Turn into 3 cup mold or individual molds.
Chill until firm.
Unmold.
Garnish with salad greens, scallions and radishes.
