Carrot Walnut Loaf Recipe
First of all let me thank my neighbor for sharing this excellent Carrot Walnut Loaf recipe. I tried this recipe for Carrot Walnut Loaf the other day and was totally bowled over. Ingredients
1 cup vegetable oil
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 1/2 cups grated carrot
1 1/2 cups ground walnuts
Citrus Glaze
Directions
1. Grease a 9x5x3-inch loaf pan; dust lightly with flour; tap out any excess.
2. Stir together vegetable oil, sugar, eggs and vanilla in a large bowl with wire whip.
3. Sift flour, baking soda, cinnamon and salt into sugar mixture; stir in carrots and walnuts; mix just until blended. Turn into prepared pan.
4. Bake in moderate oven (350°) 1 hour, or until center springs back when lightly pressed with fingertip. Cool cake in pan 10 minutes. Turn out onto wire rack; cool completely. Drizzle citrus glaze over top and sides of cake.
