Carrot Ring Mould Recipe

Ingredients

 4 to 6 grated raw carrots, about 2 to 2 1/2 cups
 Eggs3
 Nutmeg1/4 Teaspoon, grated
 Salt1/2 Teaspoon
 Pepper white1/4 Teaspoon
 1/2 cup chopped pecans, almonds or peanuts
 Onion1 Tablespoon, minced
 1 tablespoon minced green pepper if desired
 1/2 cup heavy cream or evaporated milk
 2 tablespoons butter, extra butter for mold
 Parsley or mint
 Hot sauce

Directions

Beat the eggs, add carrots and seasonings, then milk, nuts.
Melt the butter and add.
Grease mold well with butter.
Pour mixture into the mold and set in oven in pan of water.
Bake at 325 degrees for about 35 minutes, or until firm.
Unmold carefully, garnish with parsley or sprigs of fresh mint leaves.
Fill with hot sauce.
