Carrot Raisin Bread Recipe
Ingredients
| Butter -€“ 2/3 cup or Margarine -€“ 2/3 cup | ||
| Sugar | 1 Cup (16 tbs) | |
| Eggs | 2 Small | |
| All-purpose flour -€“ 1 ½ cups, sifted | ||
| Baking powder | 2 Teaspoon | |
| Ground cinnamon | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Carrots | 1 Cup (16 tbs), finely grated | |
| Seedless raisins | 1 Cup (16 tbs) | |
| Nuts -€“ ½ cup, chopped | ||
Directions
GETTING READY
1. Preheat oven to 350°F.
MAKING
2. Cream butter with sugar to a light mixture. Beat in eggs.
3. Gradually add sifted dry ingredients to egg mixture along with rest of ingredients and mix well.
4. Transfer to a 9 X 5 X 3 inch loaf pan, thoroughly greased and lightly dusted with flour. Bake for 1 hour.
6. Allow to cool in the pan for 10 minutes, transfer to a rack, and allow to cool. Store in an airtight container.
SERVING
7. Slice and serve the bread with cream cheese.
