Carrot Raisin Bran Muffins Recipe

Ingredients
No Stick cooking spray
2 cups bran flakes cereal with raisins
2/3 cup buttermilk
1/2 cup Dark Corn Syrup
1 cup flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg, slightly beaten
1/4 cup sugar
1/4 cup Corn Oil
1 cup shredded carrots
Directions
Preheat oven to 400°F Spray 12 (2 1/2 inch) muffin pan cups with cooking spray.
In large bowl, mix cereal, buttermilk and corn syrup; let stand 5 minutes.
In medium bowl, combine flour, baking soda, cinnamon and salt; set aside.
Add egg, sugar and corn oil to cereal mixture; mix until blended.
Stir in flour mixture until well blended.
Stir in carrots.
Spoon into prepared muffin pan cups.
Bake 20 minutes or until lightly browned and firm to the touch.
Cool in pan on wire rack 5 minutes; remove from pan.
