Carrot Potato Recipe
Ingredients
1 recipe Hot Potato Soup without cream
1 cup diced carrots
1/4 cup diced celery
3 tablespoons butter
1 teaspoon minced fresh marjoram
Pinch sugar
1/2 cup grated carrot
1 cup half-and-half cream
Salt, white pepper and minced fresh marjoram to taste
Minced fresh parsley
Directions
Prepare potato soup and set aside.
Saute diced carrots and celery in butter until soft, sprinkling with marjoram and sugar as they are cooking.
Puree with some of the potato soup, combine with rest of soup, add grated carrot and simmer 5 minutes.
Reheat with cream and adjust seasonings to taste with salt, pepper and marjoram.
Sprinkle with a generous amount of parsley.
