Ingredients

 
4 cups sliced, uncooked carrots
 
1/4 teaspoon ginger
 
1/4 teaspoon cloves
 
2 medium onions, sliced
 
1/4 teaspoon celery seed
 
3/4 cup sugar
 
1 tablespoon salad oil
 
3/4 teaspoon salt
 
2 cups vinegar
 
1/2 teaspoon cinnamon

Directions

Cook carrot and onion slices in 1 cup of water over a low heat for 10 minutes.
Drain, add all remaining ingredients, and simmer gently for 15 minutes.
Ladle into 4 sterilized pint jars and seal securely.
