I WAS INSPIRED BY TWO OF MY FAVORITE NYC RESTAURANTS. THEY HAVE THIS CREAMY CARROT DRESSING THAT I DIE TO HAVE! SO I MADE MY OWN VERSION AT HOME. NOW YOU CAN TOO.

 Mirin4 Tablespoon
 Rice vinegar4 Tablespoon
 Sesame oil1 Tablespoon
 Soy sauce2 Tablespoon
 Ginger powder2 Tablespoon
 Silken tofu6 Ounce
 Red onion1 Small
 Lemon juice2 Tablespoon
 Garlic6 Clove (30 gm)
 Shallot1

Directions

MAKING
1. In a blending jar blend carrots. Take out and set aside.
2. In the same jar add in onion, garlic and tofu. Blend again for a few minutes.
3. Add in remaining ingredients and blend for a few minute.
4. Return pureed carrot again to the jar and give a final swirl.

SERVING
5. Make a bed of spinach and pour down the carrot miso sauce over it and serve.
