Carrot & Jicama Slaw Recipe

| 1/4 cup chopped fresh cilantro leaves or fresh mint leaves | ||
| Lime juice | 1/4 Cup (16 tbs) | |
| Honey | 4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Red pepper | 1/8 Teaspoon, crushed | |
| Carrots package | 1 , shredded | |
| 1 medium Jicama, peeled and cut into 1/8 inch thick sticks | ||
| 1/2 medium red pepper, cut into 1/8 inch thick slices | ||
| Fresh cilantro leaves for garnish | ||
Directions
In large bowl, with fork, mix chopped cilantro, lime juice, honey, salt, and crushed red pepper.
Add carrots, jicama, and red pepper; toss.
Cover and refrigerate if not serving right away.
Garnish with cilantro.
