Ingredients

 1/4 cup chopped fresh cilantro leaves or fresh mint leaves
 Lime juice1/4 Cup (16 tbs)
 Honey4 Teaspoon
 Salt1/4 Teaspoon
 Red pepper1/8 Teaspoon, crushed
 Carrots package1 , shredded
 1 medium Jicama, peeled and cut into 1/8 inch thick sticks
 1/2 medium red pepper, cut into 1/8 inch thick slices
 Fresh cilantro leaves for garnish

Directions

In large bowl, with fork, mix chopped cilantro, lime juice, honey, salt, and crushed red pepper.
Add carrots, jicama, and red pepper; toss.
Cover and refrigerate if not serving right away.
Garnish with cilantro.
