Carrot Jam Recipe
Ingredients
| 1 quart grated raw carrots | ||
| Lemon juice | 2/3 Cup (16 tbs) | |
| Lemon peel | 1/3 Cup (16 tbs), grated | |
| Sugar | 3 Cup (16 tbs) | |
| Cloves | 1/2 Teaspoon | |
| Allspice | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
Directions
Combine all ingredients in a large sauce pot.
Bring slowly to a boil.
Reduce heat; and simmer, stirring constantly until thick.
Pour hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
