Carrot Cookies Recipe
Ingredients
1/2 cup (125 ml) butter
1/2 cup (125 ml) sugar
1 egg, beaten
1 cup (250 ml) carrot puree
1 tsp (5 ml) vanilla extract
1 cup (250 ml) brown sugar
2 cups (500 ml) all-purpose flour
1 1/2 tsp (7 ml) baking soda
1/2 tsp (2ml)salt
3/4 cup (180 ml) raisins
Directions
– Preheat oven to 350 °F (175 °C).
– Butter a cookie sheet.
– In a bowl, cream butter and add egg, carrot puree, and vanilla extract. Stir.
– In separate bowl, sift all dry ingredients. Add to first mixture and stir until smooth.
– Add raisins.
– Spoon batter onto cookie sheet and bake 15 minutes.
