Microwaved Carrot Conserve Recipe
Ingredients
| Carrots package | 1 , finely chopped | |
| 2 oranges, peeled and sectioned | ||
| Lemon juice | 1/3 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Powdered fruit pectin package | 1 | |
| Sugar | 4 Cup (16 tbs) | |
| Blanched almonds | 1/2 Cup (16 tbs) | |
Directions
Combine carrots, orange sections, lemon juice, salt, and pectin in a 3-quart casserole.
Stir well.
Cover with waxed paper.
Microwave at HIGH 12 to 15 minutes.
Stir once or twice during microwaving.
Add sugar to mixture.
Stir well.
Cover again with waxed paper and microwave at HIGH 6 to 7 minutes or until mixture begins to boil; then time for 1 minute of boiling.
Stir in chopped almonds.
Pour into hot, sterilized jars and seal.
Stir well.
Cover with waxed paper.
