Carrot Cake Recipe
When Carrot Cake can be made at home, why go to a restaurant for it? The Carrot Cake is a glorious invention of the European cuisine. A good way to use up Vegetable is to make some irresistible Carrot Cake. This Carrot Cake when served as Dessert is sure to please your family members. My friends tried this Carrot Cake the other day and they simply adored it. Do I need to say more?
Ingredients
1 c. sugar
1 c. salad oil
4 eggs
1 c. all purpose flour
1 c. whole wheat flour
1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. grated raw carrot
1/2 c. grated apple (about 3 medium)
1 c. golden raisins
1/2 c. chopped nuts
Directions
1. In a large bowl combine sugar, oil and eggs, and beat until slightly thickened.
2. Mix the flour, soda, salt and cinnamon, then add to the egg mixture.
3. Add the carrots, apples, raisins and nuts, and blend well.
4. Pour into a greased and floured 9" x 12" pan.
5. Bake at 350° for 35-40 minutes. Cool.
