Carrot Balls Recipe
Ingredients
| Neufchatel cheese | 3 Ounce, softened | |
| Shredded Cheddar cheese | 1/2 Cup (16 tbs) | |
| Honey | 1 Teaspoon | |
| 1 cup finely shredded carrot | ||
| 1/3 to 1/2 cup Grape Nuts cereal | ||
| 2 tablespoons finely snipped parsley | ||
Directions
In medium mixer bowl beat Neufchatel cheese, Cheddar cheese, and honey together till blended.
Stir in shredded carrot.
Cover and chill 30 minutes.
Shape into fourteen 1-inch balls; cover and chill.
Just before serving, roll balls in a mixture of cereal and parsley, pressing the cereal mixture into cheese to coat.
