1 1/4 cups pineapple juice
1/2 tsp salt
1/4 cup lemon juice

1 cup canned apricots, drained, diced
1 cup carrots, grated
Lettuce leaves
Carrot sticks
Directions
In a saucepan, sprinkle water with gelatin.
Over low heat, dissolve gelatin.
Add pineapple juice, salt, lemon juice and sugar.
Let stand to cool slightly.
Fold apricots and carrots into mixture.
Pour into molds.
Refrigerate 1 hour.
Unmold on a bed of lettuce, if desired.
