Carrot Ambrosia Salad Recipe
Ingredients
| 3 cups shredded raw carrots | ||
| 1 cup orange slices, cut in wedges | ||
| 1/4 cup slivered dates or seedless raisins | ||
| Flaked coconut | 1 Cup (16 tbs) | |
| Sour cream | 1/2 Cup (16 tbs) | |
| Honey | 2 Tablespoon | |
| Dash of ground ginger | ||
| Salt | 1 Dash | |
| Lettuce leaves | ||
Directions
Combine carrots with orange pieces, dates or raisins and coconut.
Blend sour cream and honey, to taste, with the ginger and salt.
Pour over salad and toss gently to mix.
Chill and serve on lettuce leaves.
