Hearty Caribbean Black Beans Soup Recipe Video
This is one of those dishes that’s spicy and cool, light and filling and especially delicious and nutritious. For this Quickbite, remember, if you can’t be in the tropics, you may as well bring the tropics to you!
Ingredients
·2 15 oz. cans of black beans, rinsed and drained
·1 15 oz. can of reduced fat coconut milk
·1 small onion, diced
·1 red pepper, diced
·2 jalapenos, minced
·2 tsp ground cumin
·1 tsp of cayenne pepper
·1/2 cup cilantro, chopped
·1 cup of water
·1 tbsp. extra virgin olive oil
·salt and pepper to taste
Directions
1) Heat your extra virgin olive oil in a medium pot
over a medium high heat before adding in your
onions, bell peppers and jalapenos and sauté for 2-
3 minutes.
2) Stir in the cumin, cayenne pepper and your salt
and pepper to taste.
3) Add water, coconut milk and black beans. Bring
everything to a boil then turn your heat down to
low.
4) Use your hand blender to blend some of the beans
down (if you don’t have a hand blender remove 1
cup of your beans / soup and blend in either a
conventional blender or a food processor and
return back into the pot).

I made this dish yesterday for dinner. We had it as a side dish with white rice...It was very yummmy...Thanx a lot for this exotic dish....
