Carp In Beer Recipe
Ingredients
| 4-pound carp, cleaned | ||
| Salt | 1 Tablespoon | |
| 3 cups dark or light beer | ||
| Onions | 2 , finely chopped | |
| Bay Leaf | 1 | |
| Whole peppercorns | 6 To taste | |
| Lemon | 1 , sliced | |
| Butter | 1 Tablespoon | |
| Flour | 1 Tablespoon | |
| Sugar | 1 Tablespoon | |
Directions
Cut carp into serving pieces.
Sprinkle with salt.
Set aside for 30 minutes.
Place fish in stew pan with beer, onions, bay leaf, peppercorns and lemon.
Put pan over medium heat.
Simmer gently 15 to 20 minutes, until fish is tender.
Remove fish to heated platter.
Blend butter with flour.
Stir in broth and sugar.
Continue to cook for a few minutes.
Stir constantly.
Strain sauce and pour over fish.
