Ingredients
1/4 cup mashed banana
3 tsp vegetable oil
1/2 tsp vanilla extract
1 egg
2 tsp skim milk
3/4 cup all-purpose flour
2 tsp carob powder
1/8 tsp baking powder
1/3 cup quick-cooking oatmeal
Directions
Combine banana, vegetable oil, vanilla, egg, and skim milk in a mixing bowl.
Beat until creamy.
Beat in flour, carob powder, and baking powder.
Beat well.
Stir in oatmeal.
Grease cookie sheet with vegetable-oil spray.
Drop cookie dough onto cookie sheet.
Bake at 350°F (175°C) for 8 to 10 minutes or until just firm.
Remove from oven, and cool on racks.
Beat until creamy.
Beat in flour, carob powder, and baking powder.
Beat well.
