Carob-Nut Fudge Recipe

2/3 cup (160 ml) peanut butter
 
2/3 cup (160 ml) honey
 
2/3 cup (160 ml) roasted carob powder
 
1/3 cup (80 ml) walnuts, chopped and lightly toasted
 
2/3 cup (160 ml) sunflower seeds, lightly toasted
 
1/3 cup (80 ml) sesame seeds, lightly toasted
 
1/3 cup (80 ml) raisins, soaked and drained
 
2 tbs (30 ml) Jerusalem Artichoke Flour

Directions

Heat peanut butter and honey in saucepan until smooth.
Remove from heat.
Stir in carob powder; add remaining ingredients.
Press into an 8x8-inch pan that has been sprayed with a nonstick coating.
Chill.
