Carob Nut Cookies Recipe

Ingredients

 
1 1/3 cups carob
 
1 1/2 cups oil
 
1 1/2 cups honey
 
6 tablespoons hot water
 
2 eggs, beaten
 
1/2 teaspoon salt
 
1 cup brown rice flour
 
1 1/4 cups oat flour
 
2/3 cup soy flour, sifted
 
1/2 cup skim milk powder, sifted
 
1 cup potato starch
 
1 cup walnuts, chopped
 
1 teaspoon vanilla
 
Walnut halves for garnish

Directions

Preheat oven to 350°F.
Combine carob, oil and honey in medium sized bowl.
Add hot water, eggs, and salt.
In another bowl, combine brown rice flour, oat flour, sifted soy flour, sifted skim milk powder and potato starch.
Stir into carob mixture.
Add nuts and vanilla.
Form into balls the size of a walnut, flatten slightly on top, and lay on an ungreased cookie sheet.
Place a walnut half on top of each cookie.
Bake in preheated oven for 20 minutes.
Cool on a rack.
