Ingredients

 Butter1 Tablespoon
 Honey3/4 Cup (16 tbs), warmed
 1 cup buttermilk or yogurt
 Whole wheat pastry flour2 Cup (16 tbs)
 Carob powder1/2 Cup (16 tbs)
 Vanilla1 Teaspoon
 Soda1 Teaspoon
 1/2 cup strong, hot coffee
 Nuts1/2 Cup (16 tbs), chopped

Directions

Preheat oven to 350° F.and grease and flour a 9-inch round springform pan.
In a mixing bowl, cream butter, add honey, and beat until light and smooth.
Add buttermilk or yogurt.
Sift together the flour and carob powder.
Add to the creamed mixture.
Stir in vanilla.
Mix soda with hot coffee and add to batter.
Stir in nuts.
Pour batter into prepared pan and bake in preheated oven for 35 minutes.
Allow to cool for 5 minutes, then remove ring and set cake on wire rack to cool completely.
Ice with MOCHA FROSTING
