Carob Coconut Clusters Recipe

2 cups rolled oats
 
1 cup warmed honey
 
1 beaten egg
 
1 teaspoon vanilla
 
3/4 teaspoon salt
 
1/2 cup melted butter
 
3 tablespoons carob powder, sifted
 
2 cups grated, unsweetened coconut

Directions

Preheat oven to 350° F.Put oats into blender, one cup at a time, set at chop and process a few minutes until a coarse flour results.
Set aside.Combine honey, egg, vanilla, salt, butter, and carob.
Mix well, then add oat flour and beat thoroughly.
Stir in the coconut.
Drop by the rounded teaspoonful onto parchment-lined baking sheet.
Bake 12 to 15 minutes.
Remove from baking sheet and cool on rack.
