Carob Cake Recipe
Ingredients
| 1 cup whole wheat floor | ||
| 1 cup unbleached white flour | ||
| Brown sugar | 1 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Carob powder or unsweetened cocoa | ||
| Ground cinnamon | 1 Teaspoon | |
| Ground cloves | 1/2 Teaspoon | |
| Nutmeg | 1/2 Teaspoon, grated | |
| 1 1/2 cups chunky unsweetened homemade applesauce | ||
| Vegetable oil | 1/2 Cup (16 tbs) | |
| 1 large egg, lightly beaten | ||
| Pitted dates | 1/2 Cup (16 tbs), finley snipped | |
| 1 teaspoon grated orange or lemon rind | ||
Directions
1. Preheat the oven to 325 degrees.
2. Mix the whole wheat flour, white flour, sugar, baking powder, baking soda, salt, 2 tablespoons carob powder, and the spices.
3. Mix the applesauce, oil, egg, dates, and orange peel. Add to dry ingredients and mix well.
4. Oil well a 9-inch square pan and dust lightly with carob powder. Turn batter into the pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
5. Cool in the pan on a wire rack.
