Carnitas Recipe
Ingredients
| 2 lbs. pork shoulder, butt or country style spareribs | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Garlic | 2 Clove (5gm), minced | |
| Cumin | 1/4 Teaspoon | |
| Juice of 2 oranges | ||
Directions
Cutthe pork into 1" cubes, leaving some fat on the pieces.
Place in a dutch oven and barely cover with water.
Add the salt, pepper, garlic and cumin.
Simmer until the water is almost evaporated.
Add the orange juice and continue cooking about an hour or until the meat is lightly browned.
