Carne Tampiquena Recipe
Ingredients
| 6 New York strip steaks | ||
| Bacon Slices | 18 | |
| Butter | 2 Tablespoon | |
| Tomatoes | 2 Cup (16 tbs), diced | |
| 3 Anaheim chiles, roasted, peeled & chopped | ||
| Onion | 1 , chopped | |
| Garlic | 2 Clove (5gm), minced | |
| Ham | 1/4 Pound, boiled | |
| Cilantro | 1/4 Cup (16 tbs), chopped | |
| Cumin | 1/2 Teaspoon | |
| Oregano | 1 Teaspoon | |
| Tomato sauce | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Melt butter in a skillet and saute the tomatoes, chilies, onion, garlic and ham about 10 minutes.
Add the spices and tomato sauce.
Simmer 15 minutes.
Cut a pocket in each steak and fill with half the vegetable mixture.
Wrap each steak with 3 slices of bacon.
Broil or grill the steaks.
Reheat the remaining vegetable sauce and spoon over the steaks when serving.
