Cover chorizo with water, bring to a boil, reduce heat, and simmer, covered, for 20 minutes.
Drain and let cool.
Cut beef and pork into diagonal slices about 1/4 inch thick and arrange separately on a large tray along with chorizo.
Cook sausage and slices of meat on a grill 1 or 2 inches above a solid bed of very hot coals.
Cook pork until it loses most of the pink color, then turn to cook evenly until all pinkness is gone.
Cook beef to the degree of doneness you desire.
Cook sausage just until lightly browned and heated through.
Sprinkle coarse salt onto beef and pork before eating.
Accompany with sauteed green peppers and fried bananas.
