Caribbean Jerk Pork Recipe
Ingredients
1 lb. pork tenderloin
1 T fresh ginger, grated
1 T black pepper, coarsely ground
1T brown sugar
2 cloves garlic, finely minced
2t fresh cilantro, chopped
1/2 t cayenne pepper
1/4 T nutmeg
1/4 T coriander nonfat cooking spray
Directions
Remove all visible fat from the pork and place the tenderloin in a flat glass pan.
In a small bowl, mix the ginger, pepper, brown sugar, garlic, cilantro, cayenne pepper, nutmeg and coriander.
Blend well to make a thick rub.
Press the rub firmly onto all sides of the pork and cover tightly.
Refrigerate for 1-2 hours.
Coat the grill with cooking spray and preheat for 5 minutes.
Grill the pork for 4-6 minutes.
To serve, slice thinly across the grain of the meat.
