Caribbean Fudge Pie Recipe
First of all let me thank my neighbor for sharing this excellent Caribbean Fudge Pie recipe. I tried this recipe for Caribbean Fudge Pie the other day and was totally bowled over. I prefer to make Caribbean Fudge Pie as a Dessert for all my family get-togethers. Is there a higher crime than reading about this Caribbean Fudge Pie and not trying it out?
Ingredients
1/4 cup butter or margarine, softened
3/4 cup packed brown sugar
3 eggs
1 package (12 ounces) real semisweet chocolate pieces
2 teaspoons instant coffee powder
1 teaspoon rum flavoring
1/4 cup all-purpose flour
1 cup coarsely broken Diamond Walnuts
1 (9-inch) unbaked pie shell
1/2 cup Diamond Walnut halves
Directions
In large bowl, cream butter and brown sugar.
Add eggs, one at a time, beating well after each addition.
In top of double boiler, melt chocolate over hot, not boiling, water and add to creamed mixture with coffee and rum flavoring.
Stir in flour and the 1 cup walnuts.
Pour into unbaked pie shell and decorate top with the 1/2 cup walnut halves.
Bake, below oven center, in preheated 375°F oven 25 minutes or until knife inserted near center comes out clean.
Cool on wire rack.
Store in refrigerator, covered.
Serve topped with whipped cream or ice cream, if desired.
