Ingredients
2 ripe avocados
45 ml (3 tablespoons) oil
22 ml (1 1/2 tablespoons) lemon juice
Salt and pepper
5 ml (1 teaspoon) soft brown sugar
22 ml (1 1/2 tablespoons) rum
Directions
1 Split the avocados lengthways and remove the stones (seeds).
Blend the oil, lemonjuice, seasoning and sugar together and pour a little over each avocado.
2 Chill in the refrigerator and, just before serving, arrange each avocado half on a lettuce leaf, sprinkle over a little rum and garnish with a twist of lemon.
