Caribbean Yam Bake Recipe
Ingredients
| 3 cups cooked, mashed yams | ||
| Eggs | 2 | |
| 1/2 cup brown sugar, packed | ||
| Margarine | 1/4 Cup (16 tbs), melted | |
| Dark rum | 2 Tablespoon | |
| 1/2 teaspoon ground nutmeg Zest and juice from 1 lime | ||
| Bananas | 2 , peeled | |
Directions
In large bowl, combine mashed yams with eggs, brown sugar, margarine, rum (if used), nutmeg, Jime zest and juice until thoroughly mixed.
Fold in diced bananas.
Turn into shallow greased 5-cup baking dish.
Bake in 375°F oven 40 minutes.
