Caribbean Rice Recipe
Ingredients
| Vegetable oil | 4 Tablespoon | |
| Onion | 1 Medium, finely diced | |
| Garlic | 1 Clove (5 gm) (Peeled) | |
| Washed, drained rice | 1 Cup (16 tbs) | |
| Small can tomato paste | 1 | |
| Boiling water | 2 Cup (32 tbs) | |
| Salt | To Taste |
Directions
Heat oil in large heavy pan.
Brown onions and garlic clove.
Turn heat to medium and pour the rice into the pan, stirring constantly, until the grains turn opaque, about 5 to 10 minutes.
Add tomato paste and boiling water.
Stir once, bring to the boil, cover and turn heat to low.
Cook 30 minutes.
Remove garlic clove.
Brown onions and garlic clove.
Turn heat to medium and pour the rice into the pan, stirring constantly, until the grains turn opaque, about 5 to 10 minutes.
Add tomato paste and boiling water.
Stir once, bring to the boil, cover and turn heat to low.
Cook 30 minutes.
Remove garlic clove.
