Caribbean Pork Chops Recipe
Carribean pork chops is a fruited and spiced pork chops recipe. Skillet cooked with garlic, ginger root, coconut milk and cayenne pepper, the caribbean pork chops are flavorful and savory. Finished with a hint of lime juice, the pork chops are good with rice and a side salad for a full meal.
Ingredients
1 green-tip, large Banana
1 tablespoon vegetable oil
2 boneless loin pork chops, 1 inch thick
1 large clove garlic, pressed
2 tablespoons slivered fresh ginger root
1/2 cup canned coconut milk
1/4 cup water
2 tablespoons chutney
1/8 teaspoon cayenne pepper
1 tablespoon lime juice
Shredded lettuce or hot cooked rice, optional
Directions
Cut banana in half crosswise, then lengthwise.
In skillet, saute banana in oil 30 to 45 seconds, shaking skillet.
Remove banana.
Add more oil to skillet if necessary.
Brown pork chops on each side 2 to 3 minutes.
Stir in garlic and ginger; saute lightly.
Stir in coconut milk, water, chutney and cayenne.
Spoon over pork chops.
Cover; simmer 8 to 10 minutes.
Stir in lime juice.
Remove from heat.
Serve over shredded lettuce or with rice, if desired.
Generously spoon sauce over pork chops and bananas.
