Caribbean Cabbage Soup Recipe
Ingredients
| 1/2 green cabbage, quartered, cored & sliced | ||
| Oil | 2 Tablespoon | |
| 3 slices fresh ginger, chopped fine or 1/2 tsp ground ginger | ||
| Onion | 1 Medium, chopped | |
| Hot water | 6 Cup (16 tbs) | |
| 1 large potato, skin on, washed and diced | ||
| Dried shrimp | 1/2 Pound | |
| Salt | 1/2 Teaspoon | |
| Black pepper | 1 Teaspoon | |
| Juice & zest of 1/2 lemon | ||
| Cayenne pepper | 1/2 Teaspoon | |
| Coconut | 1/4 Cup (16 tbs), grated | |
Directions
GETTING READY
1)Soak dried shrimp in white wine for atleast 30 minutes.
MAKING
2)In a saucepan, heat oil.
3) Saute onion and ginger for a minute.
4)Tip in the potatoes, cayenne pepper and salt. Saute until potates are lightly browned.
5)Add cabbage, black pepper and dried shrimp and simmer for atleast 5-10 minutes.
6)Just before servingm, blend in the grated coconut, lemon juice and fresh shrimp and boil for 1-2 minutes.
SERVING
7)Ladle into warm soup bowls
8) Garnish with chopped green onion or chopped cilantro.
9) You can serve this with rice if you like
