Ingredients

 1/2 green cabbage, quartered, cored & sliced
 Oil2 Tablespoon
 3 slices fresh ginger, chopped fine or 1/2 tsp ground ginger
 Onion1 Medium, chopped
 Hot water6 Cup (16 tbs)
 1 large potato, skin on, washed and diced
 Dried shrimp1/2 Pound
 Salt1/2 Teaspoon
 Black pepper1 Teaspoon
 Juice & zest of 1/2 lemon
 Cayenne pepper1/2 Teaspoon
 Coconut1/4 Cup (16 tbs), grated

Directions

GETTING READY
1)Soak dried shrimp in white wine for atleast 30 minutes.

MAKING
2)In a saucepan, heat oil.
3) Saute onion and ginger for a minute.
4)Tip in the potatoes, cayenne pepper and salt. Saute until potates are lightly browned.
5)Add cabbage, black pepper and dried shrimp and simmer for atleast 5-10 minutes.
6)Just before servingm, blend in the grated coconut, lemon juice and fresh shrimp and boil for 1-2 minutes.

SERVING
7)Ladle into warm soup bowls
8) Garnish with chopped green onion or chopped cilantro.
9) You can serve this with rice if you like
