Caribbean Baked Squash Recipe

Ingredients
1 pound winter squash (hubbard, acorn) peeled and cut in 1 inch cubes
1/4 cup butter or margarine
1 can (8 ounces) crushed pineapple
1 teaspoon grated orange rind
Dash nutmeg
Directions
Place squash in 1 quart casserole.
Cover.
MICROWAVE 8 to 10 MINUTES on HIGH, or until almost tender, stirring once.
Set aside.
Place butter in 2-cup measure.
MICROWAVE 30 SECONDS on HIGH, or until butter is melted.
Add pineapple, orange rind and nutmeg.
Mix well.
Spoon mixture over cooked squash.
Cover.
MICRO WAVE 2 MINUTES on HIGH, or until hot.
Let stand 5 minutes to finish cooking and blend flavors.
Garnish with parsley if desired.
