1 1/2 cups pancake mix
 
1/2 cup sugar (for cookie dough)
 
1 tablespoon caraway seeds
 
1 egg
 
1/2 cup canned applesauce
 
2 tablespoons melted butter or margarine
 
1/4 cup sugar (for topping)
 
1 teaspoon grated lemon peel

Directions

Combine pancake mix, 1/2 cup sugar and caraway seeds in medium-size bowl.
Beat egg slightly in small bowl; blend in applesauce and melted butter or margarine; stir into dry ingredients; 'mix well.
Drop by half teaspoonfuls, 1 inch apart, on greased cookie sheets; sprinkle mixture of 1/4 cup sugar and lemon peel on top.
Bake in moderate oven (350°) 6 to 7 minutes, or until edges are slightly browned; cool cookies 1 minute, then remove and cool completely on wire racks.
