Ingredients
| 300 g/10 oz carrots, peeled and halved or quartered lengthways | ||
| Caraway seeds | 1 Teaspoon | |
| Olive oil | 2 Teaspoon | |
| 1 orange, zested | ||
| Red wine vinegar | 2 Teaspoon | |
| 1 tbsp mixed seeds, such as pumpkin, sunflower and linseed | ||
| 2 large handfuls spinach leaves | ||
| 50 g/2 oz feta | ||
Directions
GETTING READY 1) Preheat the oven to 200 degrees Centigrade. MAKING 2) Boil the carrots for around 4 minutes. Drain the carrots. 3) On a baking sheet, spread the carrots and toss with caraway seeds, orange zest, seasoning and 1 tsp of oil. 4) In the oven, roast the carrots for approximately 20 minutes. FINALIZING 5) Remove the pith from the orange. 6) Over a bowl, cut the orange segements and squeeze off the juice. 7) Mix the remaining oil vinegar along with seeds and seasonings in the orange juice. 8) Combine the mixture with roasted carrots and spinach. SERVING 9) Serve into two seperate plates with a topping of crumbled feta cheese.
