 Pancake mix1 1/2 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs)
 Caraway seeds1 Tablespoon
 Egg1
 Applesauce1/2 Cup (16 tbs), canned
 Butter/Margarine2 Tablespoon, melted
 Sugar1/4 Cup (16 tbs)
 1 teaspoon grated lemon rind

Directions

1. Combine pancake mix, the 1/2 cup sugar and caraway seeds in medium-size bowl.
2. Beat egg slightly in small bowl with a fork; blend in applesauce and melted butter or margarine; stir into dry ingredients; mix well.
3. Drop by half teaspoonfuls, 1 inch apart, on greased cookie sheets; sprinkle mixture of 1/4 cup sugar and lemon rind on top.
4. Bake in moderate oven (350°) 6 minutes, o;r until edges are slightly browned; cool cookies 1 minute, then remove with spatula and cool completely on wire racks. Store in metal tin with tight cover.
