Caraway Blue Cheese Wafers Recipe
Ingredients
1-1/4 c wholewheat pastry flour
1/3 c (2 oz ) Blue cheese
1 t caraway seeds
1-1/4 c butter
1 t ice water
Directions
In a bowl combine flour, butter, cheese, and seeds, mixing until dough resembles coarse crumbs.
Stir in 1 T ice water.
With your hands, form dough into a roll about 1-1/2 inches in diameter.
Wrap in foil and refrigerate overnight or until firm.
Cut into 1/8 inch thick slices.
Place on cookie sheet and sprinkle additional caraway seeds on top.
Bake at 400° for 10 minutes.
Serve warm or cold on a plate garnished with clusters of grapes.
These wafers also make a tasty accompaniment for a simple soup or as a last course served with nuts and fresh fruit.
