Caramelized Onions Recipe
Ingredients
| Vegetable cooking spray | ||
| Olive oil | 1 Tablespoon | |
| 3 large purple onions, thinly sliced and separated into rings | ||
| Sugar | 1 Teaspoon | |
| Plain non-fat yogurt | 2 Carton (1l) | |
| Balsamic vinegar | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Ground pepper | 1 Dash | |
Directions
Coat a large nonstick skillet with cooking spray; add oil.
Place over medium-high heat until hot.
Add onion and sugar; saute 10 to 15 minutes or until onion is tender, stirring mixture frequently.
Reduce heat to medium-low, and cook 20 to 30 minutes or until onion is golden brown, stirring occasionally.
Remove from heat, and let cool completely.
Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness.
Cover with additional paper towels; let stand 5 minutes.
Scrape into a bowl, using a rubber spatula.
Add vinegar and salt, stirring well.
