Directions

MAKING
1.In a heavy bottom pan melt sugar over low flame.
2.Once the sugar has melted tilt the pan in a circular motion till the sugar attains a rich amber color. Do not stir or mix the sugar using a spoon. At this stage the sugar needs to be left as it is and has to be moved by tilting the pan only.
3.Once the caramel is ready add the cream slowly from the sides of the pan.
5.On adding the cream the caramel will immediately solidify, you may wait till it gradually melts.
6.Once the caramel is liquid again add the salt and vanilla and mix well.

SERVING
7.Slightly cool the sauce and use immediately to top ice creams or puddings.

Recipe makes 1 1/3 cups of caramel sauce.
