Directions

Melt sugar slowly in a heavy skillet, stirring constantly, until reddish brown in color.
Remove from heat, and slowly stir in boiling water.
Add salt and orange rind, return to heat and cook gently until lumps are dissolved, and mixture is consistency of maple syrup.
Strain if desired, cool, and serve spooned over Baked Custards, which have been turned into individual serving dishes.
If syrup thickens too much on cooling, thin with a little hot water.
