|Fish fillets||4 (Approximately 1/4 Inch Thick)|
|Unseasoned bread crumbs||1 Cup (16 tbs)|
|Yellow corn meal||1 Cup (16 tbs)|
|Seafood seasoning||1⁄3 Cup (5.33 tbs)|
|Extra virgin olive oil||1⁄4 Cup (4 tbs)|

Coat fish with the mixture.
Beat the eggs in a separate bowl.
Take the coated fillets and dip in the beaten egg.
Coat fillets again in the dry mixture.
Put extra virgin olive oil, approximately 1/8 inch deep into a frying pan and heat over medium heat.
When heated, add fillets and cook approximately 4 to 5 minutes on each side over medium heat until fish is golden brown and flakes easily with a fork.
