Capsicum Delight Recipe

Ingredients
Green capsicum, deseeded and cubed 350 gms
Roasted split chickpeas, powdered 1/2 cup
Grated or dehydrated coconut 1/2 cup
Red chillie powder 1 tsp
Mustard seeds 1 tsp
Turmeric powder 1 tsp
Asaioetida 1/2 tsp
Salt to taste
Directions
Heat the oil in a thick bottomed pan ana place the mustard in it.
When the mustard begins to splutter add the turmeric powder and asafoetida and saute for 30 seconds.
Add the cubed capsicum and stir fry.
For a minute and add a little water for cooking the capsicum.
Cook covered for not more than five minutes.
The colour of the capsicum must not pale.
Then add the roasted split chick pea powder, coconut, keeping aside a tablespoon for garnish, chillie powder and salt and mix the whole lot together.
Add enough water so that it can blend well.
This is a well blended moist vegetable dish, neither wet nor dry.
Cook covered or a couple of minutes, stirring occasionally.
Transfer to a serving dish and garnish with the remaining coconut.
Serve hot with plain rotis or parathas.
