Cappuccino Muffins Recipe
Cappuccino muffins are cappuccino flavored muffins made with instant espresso powder. Baked with eggs, flour, sugar, buttermilk and cinnamon for extra flavor, the cappuccino muffins are topped with a cinammony cocoa, brown sugar and espresso powder.
Ingredients
2 cups all-purpose flour 500 mL
1 tbsp baking powder 15 mL
1/2 tsp baking soda 2 mL
2 tbsp instant espresso powder 25 mL
1/2 tsp cinnamon 2 mL
1/4 tsp salt l mL
1 egg or 2 egg whites 1
2/3 cup granulated sugar 150 mL
1/4 cup vegetable oil 50 mL
1 cup buttermilk or low-fat yogurt 250 mL
Topping:
1/3 cup brown sugar 75 mL
1 tbsp cocoa 15 mL
1 tsp instant espresso powder 5 mL
1/4 tsp cinnamon l mL
Directions
In bowl, combine flour, baking powder, baking soda, espresso powder, cinnamon and salt.
Mix well.
In large bowl, beat egg with granulated sugar, oil and buttermilk.
Add dry ingredients to large bowl and stir just until combined.
To make topping, in small bowl, combine brown sugar, cocoa, espresso powder and cinnamon.
Spoon half of batter into 12 medium non-stick, lightly oiled or paper-lined muffin cups.
Sprinkle with half of topping mixture.
Top with remaining batter and sprinkle with remaining topping.
Bake in preheated 375°F/190°C oven for 20 or 25 minutes.
