Baked Capon and Savory Dressing en Casserole Recipe

| Onion – ¼ cup, finely chopped | ||
| Celery and Leaves – ½ cup, finely chopped | ||
| Dry Bread Cubes – 5 cups | ||
| Salt | 3/4 Teaspoon | |
| Garlic salt | 1/8 Teaspoon | |
| Sage | 1/4 Teaspoon | |
| Thyme | 1/4 Teaspoon | |
| Stuffed Olives – ½ cup, sliced | ||
| Chicken broth | 2 Cup (16 tbs) | |
Directions
GETTING READY
1) Preheat the oven to 350F
MAKING
2) In a clean zip lock bag, place the capon pieces with flour, salt and pepper and toss to coat
3) In a large skillet, melt the shortening and fry the capons till evenly browned
4) In a large casserole, arrange the capon on the sides
5) In the remaining shortening, sauté the onion and celery till soft
6) Mix together the bread cubes, seasonings, olives, butter and ½ cup chicken broth in a bowl
7) Place the mixture into the center of the casserole
8) Pour the remaining broth over the capon
9) Cover with the lid and bake for 1 hour and 10 minutes or till the capon is tender
10) Take off the cover and bake for an additional 15 minutes to brown the dressing
11) From the leftover drippings in the skillet, a gravy can be made
