Capitol Cheese Truffles Recipe

Ingredients
1/4 pound unsalted butter, softened
1/4 pound Gouda or Cheddar cheese, grated
2 tablespoons Port wine
1/4 teaspoon seasoned salt
1/8 teaspoon white pepper
1 1/2 cups fine dry pumpernickel bread crumbs
Sliced fresh fruit (such as apples or pears)
Directions
Cream the butter well in a food processor or blender.
Add the grated cheese and puree.
Pour in the Port, season with salt and pepper, and blend until well combined.
Refrigerate the mixture until it is firm enough to handle.
Shape the cheese into small balls and roll in bread crumbs until thoroughly coated.
Chill well before serving cheese truffles with sliced fresh fruit.
