Cape Cod Muffins Recipe
Ingredients
| All purpose flour | 2 Cup (16 tbs), sifted | |
| Baking powder | 1 Tablespoon | |
| 1 1/2 teaspoons apple-pie spice | ||
| Salt | 1 Teaspoon | |
| Firmly packed brown sugar | 1/4 Cup (16 tbs) | |
| Whole | 1 Can (10oz) | |
| Egg | 1 | |
| Vegetable shortening | 1/4 Cup (16 tbs), melted | |
Directions
1. Sift flour, baking powder, apple-pie spice and salt into a large bowl; stir in brown sugar.
2. Drain cranberry sauce; measure out 1 cup (save remaining sauce and liquid to serve later). Beat egg in a small bowl; stir in measured cranberry sauce and melted shortening. Add all at once to dry ingredients; stir lightly until evenly moist. Spoon into 12 medium-size greased muffin-pan cups.
3. Bake in a hot oven (400°) for 20 minutes, or until golden-brown.
