Cantaloupe & Beef Salad Recipe
Ingredients
1 lb. extra-lean (90% lean) ground beef
3 tablespoons chopped fresh mint or 1 tablespoon dried leaf mint
1 garlic clove, minced
Salt and freshly ground pepper
4 cups cantaloupe balls
1 cup cubed jicama
1/2 cup creamy reduced-calorie Italian dressing
8 cups torn lettuce leaves
Directions
Brown ground beef in medium skillet.
Drain.
Add mint and garlic; cook 2 minutes, stirring constantly.
Season with salt and pepper to taste.
Combine ground beef mixture, cantaloupe and jicama in serving bowl; stir in dressing.
Add lettuce; toss lightly.
